Executive Chef Gustavo Romero's culinary career began in his hometown of Hidalgo, Mexico when he was still a young boy. He absorbed the region's rich culinary tradition from his mother and grandmother before leaving for professional training in the United States at the age of 17.

Since then, his star has risen rapidly under the tutelage of acclaimed chefs like Paul Albrecht, Albert Lumpkin and Credo's founding chef, Mario Maggi. Chef Romero's eclectic kitchen experience spans three countries and a host of styles and philosophies, including an extended professional sojourn in Italy learning from a series of true Italian masters.

At Credo, Chef Romero has achieved an exciting synthesis of his formative years, formal training, world travel and youthful energy.

While rustic Italian dishes appear often throughout the menu, Chef Romero’s unrestrained creative impulse also produces provocative new twists on traditional mainstays and wholly unique dishes that are quintessentially “Romero.”
